Uni Hand Rolls
Yield: 2 Servings, 12 hand rolls
Time: Approximately 25 minutes
Ingredients:
1/2 cup soy sauce
1/2 cup mirin
1/4 cup granulated sugar
1 cup sushi rice
3x 60 gram uni trays
6 sheets nori, cut in half
1 english cucumber, thinly sliced
1 avocado, thinly sliced
Preparation:
Cook rice according to package instructions letting it cool to room temperature once fully cooked. Meanwhile, in a small saucepan over medium-low, bring soy sauce, mirin, and sugar to a simmer. Cook, stirring occasionally until sugar dissolves and sauce is reduced to ~3/4 cup, 6-8 minutes. Remove from heat and set aside to cool.
Place 1/2 nori sheet in your hand with the rough side facing up and the excess of the sheet hanging off your hand to the right. Carefully spread sushi rice on the half of the nori sheet in your hand. Arrange cucumber, avocado, and uni diagonally across the rice. Then, pull the corner near your thumb over the fillings and use your other hand to pull the opposite corner across the hand roll, making a cone around the fillings. You may need to rub a bit of water on the edge of the nori sheet to help it stick.
Eat as you go, dipping into the prepared sauce as much or as little as you like!
