1# Bay Scallops
10 Mint Leaves, Finely Chopped
1 T of the Best Possible Extra Virgin Olive Oil
Flaked Sea Salt, Such As Maldon
2 Scallop Shells [Optional]
Zest, then juice lemon and lime.
Combine and strain citrus juices. Set aside.
Finely chop mint leaves. Mix chopped mint in with lemon and lime zests.
Rinse scallops in ice cold water. Gently pat dry.
Slice each scallop in half horizontally, maintaining circular shape.
Arrange sliced scallops on a cleaned scallop shell or plate.
Drizzle strained citrus juice and olive oil over top of scallop slices.
Sprinkle with the salt, then garnish with zests and mint.
