Grown in the protected area of Popponesset Spit, these oysters have a wonderful combination of the briny, bright waters of Nantucket Sound and the sweet, freshwater influence from Popponesset Bay. The gentle tidal flow allows a steady influx of nutrients and allows the oysters to grow into beautifully deep-cupped treasures.

Oyster seed is floated in fine mesh bags and moved to off-bottom cages after the first growing season.

Richard Cook has been in the industry for over 30 years. After years of legal challenges from abutters, in 2015, Dick received a 10-year shellfish aquaculture license to grow oysters on a 1.9-acre grant in Popponesset Bay.
