To All Oysters

Chelsea Gem Oyster

Eld Inlet, WA
Chelsea Gems have a clean minerality. Mild and briny, these oysters are great for a beginning oyster eater due to their off-bottom growing method. This gives them a flavor that tends towards water more than beach. An Oyster Connoisseur will appreciate the subtle flavors of cucumber, horseradish, and slate.

the Grower

Our farm started and remains on the eastern shore of Eld Inlet. Although we do farm in most of the bays of lower Puget Sound, Eld Inlet is where the crew is based and our home fires burn. We take pride in farming in harmony with Mother Nature. If you are enjoying our shellfish, you are having a piece of what we love. The bay is our gift to protect. The oysters are a reflection of her clean, calm waters. They taste of cucumbers and ocean.  Their deep cupped shells are an example of farming ingenuity and the power of the tides.
