Shuck of the Week: Matunuck Oysters

We haven't had Matunucks in a long while, so when I heard that they were going to be in, I knew I had to give them a shuck! And wow, was I impressed!

The oysters were hearty, the shells were strong, and the meats were full! Shells were clean and beautifully white and green, and the oysters came in at a solid 3.5 inches. When it came to shuckability, hinges were pretty consistent, they had a clean pop, and no shell breakage. It really was an ideal oyster to shuck.

In terms of flavor, it was nothing less than what I would expect from a nice Rhode Island oyster. It had punch of brine and a sweet meat. A very very nice choice for a flavorful (briny) oyster.
