Capital Oysters are named for Olympia, the capital of Washington State. Tom Bloomfield and his team wanted to put their city on their back and their community in their hearts. Grown by suspension, these oysters live in the middle of the water column and feed on the cleanest and most optimal food. This is a culmination of five generations in the making. Now 125 years later, Capital Oysters is ready to to write its chapter in Washington's historic oyster community.

Growout method
Oysters spend their entire life suspended off the bottom in bags hung on a line. They are flipped up and down by the tide twice a day, which naturally tumbles the oysters to promote very deep and smooth shells while also knocking off barnacles.

His 5th generation oyster farmer knowledge, has helped him foster every single oyster grown on their farm. Tom was one of the founders of the tide tumbling method, something that uses Tidal Hydraulics to naturally tumble the oysters. Creating deep cups, and beautiful shells. The farm is in a remote location, more than 10 miles from a major fresh water source. This delivers the consistency in flavor profile Capital has become well known for.
