Growout method
Butter & Brine Oyster Company is one of Rhode Island’s first aquaculture operations to primarily use floating gear. Suspending the oysters in the top foot of the bay gives them access to the most nutrient-rich water that they can get. It also exposes them to more water flow, and getting knocked around by the current helps develop the oysters’ deep cups, thick shells — and, in turn, their meats.

After taking a course at Roger Williams University with aquaculture extension specialist and professor Dale Leavitt, Kyle Hess obtained the lease for his oyster farm in 2012. Since then, he has expanded the farm from 3 to 5 acres. Hess and a team of four farmhands tumble, clean and grade (sort) the oysters on a monthly basis, rotating their way around the farm. What we really want people to know is that a Rhode Island oyster is a great oyster.
