Shuck of the Week: Riptide and Hood Canal Oysters

Week of October 20th -- since our Riptide grower was so proud of his oysters, we had to give them a shuck. And they are damn tasty with a lot of salt. Chose the Hood Canals as the West Coast shuck and surprisingly, scored a 4 out of 5 for shell shape and consistency. Read more for my tasting notes.
