This is our state-of-the-art wet-storage system. Our system is fully permitted by the Massachusetts State Food and Drug, and HACCP compliant. How does wet-storage differ from depuration? Depuration is needed when shellfish is purchased from a polluted area, and is then "cleaned up" using a similar system. We only purchase shellfish from areas classified as approved by the State of Massachusetts, and never from polluted grounds!
Rest assured, we are NOT wet-storing 99% of our oysters. We feel wet-storing oysters makes for a generic flavor that growers, chefs and consumers are not looking for. We want our oysters to maintain the unique flavor that nature intended! Besides, our oysters don't need to be wet-stored, as the freshness and quality speaks for itself!
