Geography -These oysters are grown in Duxbury
Bay, just to the north of Cape Cod Bay and the Canal. Duxbury Bay
is generally colder than Cape Cod Bay, with sandy bottom and large
tides.
Method of Culture - The grower purchases oyster
seed at the size of 1-2mm. These seed are grown in nursery bags
with very fine mesh. As the oysters grow, they are moved to bags
with larger mesh. The oysters are then placed on the bottom to
finish growing. This method produces a large fluted shell. After
2-3 years of growth, they are ready for market.
Appearance and Flavor - Saquish Neck Duxbury
Oysters are medium in size with green and white shells. The cup is
deep and the meats are silky and smooth. They are very fairly
salty in flavor with a clean and lingering finish.
Availability - Saquish Neck Oysters are
available from May thru December. Production is limited, as this
is a small family farm. |
