Chelsea Gem Oysters

Chelsea Gems have a clean minerality.  Mild and briny, these oysters are great for a beginning oyster eater due to their off-bottom growing method. This gives them a flavor that tends towards water more than beach. An Oyster Connoisseur will appreciate the subtle flavors of cucumber, horseradish, and slate.

Growout Method
"Tide powered" tumbling rack and bags. Oysters are generally held in less than 10 ft. of water, but remain off-bottom.

-Salinity: 2.9% , 3.5% full oceanic salinity
-Tides: 14ft - 2 cycles per day
-Bottom: Mud

Chelsea Gems are the original tide tumbled oyster. A brain child of John, our father, who is the official idea man of the farm. He would watch Linda, our mother, labor all winter long, shaking and flipping her oysters.  He knew there had to be a better way.  Inspired by a seed nursery technique of a farming friend, he engineered the first tide tumbling bags.
