  • Tides: Fast moving currents from Nantucket Sound, 3 to 4 ft. tides
  • Bottom Makeup: Intertidal site has a sandy bottom; deep water site has a mud bottom

Growout Method
2mm seed is started in floating OysterGro trays. One intertidal site uses bottom cages; the other site uses suspended trays and cages. Time to market: 18 to 30 months.

About the Grower

Simon Edwards has been farming oysters on Nantucket for many years now and can attest to the trials and tribulations of harvesting this delicacy on Nantucket. Born in Kenya and educated in the U.K., Edwards received an undergraduate degree in environmental science before getting his master's in ecological studies. "At some point you take a leap of faith because there's a whole year of making absolutely no money while having a huge investment in the water," Edwards says.
